The week is almost over, and I'm officially 2 months out from my Europe trip! Eeeeepppp! I can't even put into words how excited I am!
On the train home this afternoon I realised that since I haven't really been living in Wollongong the last couple of weeks, I didn't have anything in the fridge to make for dinner, but a quick scroll through my photo library on my phone reminded me of this little beauty that I made a couple of weeks back and LOVED.
This dish is easy, quick, healthy and tasty! Perfect for a night in with Netflix and a glass of wine...or kombucha...which ever tickles your fancy ;)
