Damn! How fast has this week gone?! It is literally Friday tomorrow and I feel like I haven’t even had Monday yet! I think the reason for this is that the excitement of moving has started to settle down, and this week I’m officially back on track. Yep! Back into a rough routine, and have my eating under control. Woohoo! I’m also feeling incredibly balanced, and relaxed – something I haven’t felt for a long time, which is super exciting!

I’m sitting on the train on my way back to Sydney, COVERED in granola. What?! It’s a long train ride and I got hungry! So not only have I managed to embarrass myself in front of the very cute guy in the seat across the walkway from me, but now I’ve eaten all my snacks and have nothing else to do for the next hour! This recipe was my favourite one of the day! We saw it in a cookbook I bought for $5 from Kmart a while back, and we seriously underestimated it! While we did change some of the ingredients by adding zucchini and spinach, they turned out better than the original recipe! How cool! It’s officially been 6 days since I moved out of home, and already I’m a pro. Yep! That’s right! I’m calling it. I’m a pro! Question is… a pro at what exactly? Well my dear friends, I am a pro at spending money…
Ok, so to be fair, I was already well rehearsed at ‘spending’ before the big move, but now my unemployed ass is living off my savings, and having to buy boring stuff like vacuums. As a result of this, I’ve had to readjust my thought process when heading to the shops. No longer can I wonder aimlessly through the grocer and plonk whatever tasty goodies I come along into my trolley. I need to have a plan of attack! One that allows me to maintain my budget, whilst also maintaining my health. Below I have listed my top tips for being ‘Healthy on a Budget’ – some of which I hadn’t thought about until this week while actually doing my first few shops, so I hope these can help some of you out there who are constantly telling yourself that it is ‘too expensive to eat healthy’ because right here, right now I’m telling you it most certainly IS NOT!
If you’re cooking for one (like yours truly), I tend to think of about 3 different meals that I can make throughout the week that I circulate between dinners and lunches. They are quick to make and still taste amazing while keeping costs down. For example, this week I wrote out the days of the week and where I knew I would be for each day at lunch and dinner (I’ve been traveling back to Sydney a couple of times for certain events which meant I would be away for some meals). Following this, I decided I would try out a couple of recipes that I have wanted to trial for a while, including: Tofu Rice Salad, and Chickpea Rissoles (recipes to come). Once I had altered a couple of the ingredients to fit more nicely with the size of my wallet, all I needed to do was shop! This allowed me to head to the supermarket with a clear idea of how much I was about to spend, while also keeping me on track with what I needed to purchase, instead of staring at the zucchinis for 10mins, thinking of what I could make with them.
Produce that is in season is far more abundant than the stuff that isn’t, making it cheaper and also FAR more tasty! By picking the in season stuff, you will also find that your foods become far more varied and colourful! So not only will your bank account thank you, but your gut will too!
While purchasing foods that are already in packets (such as baby spinach, and carrots) makes life a little bit easier, generally, you are also paying for the cost of packing it. Checking to see if there is a difference in the packed or loose produce, can keep you in your budget, and also allow you to buy even more food! #livingthedream!
Be aware of the little tricks like this that marketers play – you don’t need to have quinoa porridge with goji berries and cacao nibs each morning to eat a wholesome diet. Standard oats and a banana would well and truly suffice. So there you have it! The tips that are, so far, allowing me to remain within my budget, but also maintain my healthy lifestyle! I really hope that these tips can give you a little help when it comes to deciding what to eat each day – and some confidence that buying whole foods doesn’t require a $40 000+ annual salary. Well well well, hasn't it been a busy start to my 2018! Not only have I moved out of home, but I have done my first ever grocery shop that was JUST FOR ME! Eeee! Words cannot explain just how happy and excited I am about this new adventure I have set out for! I am so happy with my decision (despite moving away from all of my friends and family), but I feel so elated and like this is the perfect fresh start that I have been craving for months now. While I haven't quite settled into life outside of home, nor do I really know where any of my cooking stuff is, I have tried so hard to make every meal as healthy as possible, and as wholesome as possible - particularly in order to maintain my health and prevent any illness! Also, I'm in desperate need of finding a gym...cause I haven't moved my sorry ass in what feels like weeks! Anyway...I promised a new recipe, so here it is. This one is one I whipped up just before I left home a couple of days ago, and it is one that I wasn't really concentrating one when I made it, so it has some spectacularly strange ingredients which surprisingly work really nicely! I’ve never really been one for New Year’s resolutions. When I was younger I’d listen to what other people’s resolutions were, then shape them to fit something that I thought I was interested in, such as ‘go for a run every day’, ‘eat healthier food’, or ‘stretch every night before bed’ – but I’ve never understood, if people really wanted to make a change to the way they live their life, why they wouldn’t take action the minute they thought of doing ‘life’ differently.
Last year I chose to ignore the resolutions chatter. I chose to enter the New Year with no expectations of changing my entire life, just because the world clock had ticked over another 365 days. I did however, decide to continue to live my life the way I always had in that, if there was something I wanted to do, I would do it – because I didn’t want to get to the end of another year feeling as though I had nothing to show for it. Looking back at my year now, I realise that I did just that without even noticing it at the time – and by doing so, I feel I have achieved more this past year than ANY other year I have ever had! I have completely changed my mindset, from one of self-loathing, negative self-talk, and shame – to one of health, happiness, and energy! I started my own personal blog, which lead to me creating a YouTube channel, and then further developed into an Instagram account dedicated to sharing nourishing meal ideas, which furthermore lead to THIS exact blog you are now reading. I finished my first uni degree, and achieved the results I wanted. I have the trip of a lifetime lined up for the next winter break. I am the strongest, and fittest I have ever been in my life. AND I am about to start a brand-new adventure in the coming weeks, which will allow me to enter the workforce (in 4 years’ time) as someone who is able to help others with much more than just learning what foods they should and shouldn’t eat. I haven’t restricted myself in any way, shape or form. I have tried EVERYTHING, regardless of what people might think of me (YouTube can be a very judgmental platform), and I have allowed myself to be driven by those things that make me happiest, rather than the expectations of other’s, or a petty New Year resolution which is forgotten by the end of February. Allow yourself to be driven by exactly what it is in life that you want, rather than simply a meaningless resolution that you mutter under your breath at the stroke of midnight. If you don’t have a resolution, don’t stress! It could be the best thing you ever don’t have! Be happy living in the moment for what it is, and allow life to take you on its course of never ending twists and turns. Don’t plan to ‘go on a diet’, or ‘exercise every day’ – just allow your body to find its natural rhythm that will encourage sustainable change, without the pressure of actually seeking the change. I hope that you aren’t completely confused by what I have written (I do understand if you are and I am sorry for that), but hopefully there is some sense that you will be able to take out of it. It’s another year tomorrow, enter it relaxed and ready for the coming 365-day ride to begin! I wish you the happiest, and safest of New Years – and will see you again in 2018! Woohoo! After a long drive down to Canberra to meet up with the fam for Christmas, and to celebrate my grandad’s birthday, I decided a walk was in order after lunch…the ducks decided I should move my lazy ass a bit faster, so chased my halfway around the path! Who knew they had such good stamina!! Christmas Eve marks the 12th Day of my ‘12 Recipes of Christmas’, and for this very special day, I am sharing with you yet another chocolate recipe (because you literally cannot go wrong with chocolate)! Topping this fiesta of cacao, chocolatey goodness is a bundle of tasty ingredients which are both nutritious and perfect for adding a touch of Christmas colour to any dessert table. I cannot believe how fast Christmas is coming at us! Like...it's Chrissy Eve tomorrow! How has the year nearly ended already? Either way, this time of year is honestly my favourite because of the underlying buzz of energy that everyone has, and the never ending events which means...NEVER. ENDING FOOOOOOODDDDDD! Yessssss!
Last night was the night my friends and I got together and honest our own little Christmas party, of which we all brought food too, and todays "recipe" was my own addition to the table. A MASSIVE fresh fruit platter that pretty much took up all the space, but it was so amazing! I love having a selection of fresh fruits to nibble at while socialising because I often find that most of the food has dairy, or there is a large offering of meat dishes which I generally do not consume either. So! To keep things nice and simple (because I hate being that one person that others have to cater for) I cater for myself with something I know everyone (including me) will enjoy! Fresh fruit is also an awesome option for occasions where you know that people will be eating lots of sugary, processed foods such as cakes and pastries - so having a healthy and fresh option at the ready is always one of my top tips for reducing sugar cravings, and preventing you from missing out on EATING! The only thing I love more than food is when I get to make and create delicious treats to share with people! Today is no exception, as I am shortly heading off to a Christmas party with some of my closest friends, and I am in charge of the fruit and salad...TRUST! This morning however, mum asked me to make her friend's something small that she could take to her Christmas luncheon - so I whipped up a quick recipe that I have been dying to try from my new 'Healthy Life Cookbook', and it rapidly became my Day 10 Recipe for my '12 Recipes of Christmas'! Well what an eventful Day 9 of my '12 Recipes of Christmas' has been! I woke up to find my tyre COMPLETELY flat (who invented nails anyway...pft)! Following that I missed the bus that I was planning on getting, only just made the train I had to catch, sat next to a lady who insisted she read the book I was reading (over my shoulder and not discretely whatsoever), got lost and nearly killed my phone using google maps in the rain, BUT I think I may have just found a place to live when I move for uni next year!! YAY!!! So many MASSIVE changes are about to happen in my life and I am honestly the happiest little health foodie freak there is right now!
Now, onto the real stuff...CHOCOLATE! Today I was inspired by not so much Christmas itself, but rather the 'rush' of it all. Finding recipes which are super easy and quick to whip up at this time is IDEAL for so many people as Christmas is generally accompanied by swarms of family, friends, events, big nights, and it all seems to be a never ending cycle! So a recipe which is really fun to make and easy to produce is exactly what I am giving you today.
